Pumpkin Spice Snickerdoodle

There are certain recipes that just lend themselves to being labeled as a festive treat, and this is one of those recipes. Sugar cookies coated in a cinnamon sugar spice blend with a dash of pumpkin, these cookies give you a hint of fall in every bite.

Pumpkin Spice Snickerdoodle Recipe

I love cookies that are soft and chewy and this recipe is no exception. The spices work so well together and as a bonus will make your house smell amazing. The pumpkin provides a subtle flavor that isn’t overpowering. This recipe is the perfect way to get into the spirit of the season.

What You’ll Need for Pumpkin Spice Snickerdoodles

  • 1 cup of unsalted butter
  • 2 eggs
  • 1 1/2 cups of sugar
  • 1 ½ teaspoon cream of tartar
  • ½ teaspoon of baking soda
  • 2 ¾ cup flour
  • 1 teaspoon of salt
  • ¼ cup of granulated sugar
  • 2 tablespoons of pumpkin spice
  • ½ teaspoon of cinnamon

How to Make Your Snickerdoodles

  1. Add in 1 1/2 cups of sugar and butter in a mixing bowl.
  2. Whip until fluffy, add eggs and then add cream of tartar, baking soda and salt. Mix together sugar, pumpkin spice and cinnamon.
  3. Roll dough into 1 inch balls and roll in cinnamon sugar and pumpkin spice mixture.
  4. Bake at 350 for 9 min.
