Chocolate Chip Cookie & Oreo Icebox Cake Recipe

I love icebox cakes. Like, I love them more than anyone should love a dessert. They are no-bake, which is different, and super versatile. Ice-box cakes give you the opportunity to get creative and try new flavor combos as long as you stick to the basics - cream, cookies & layering.

Chips Ahoy & Oreo Icebox Cake Recipe

If you’ve never made an icebox cake, now is the time. This recipe features two of my favorite cookies, Chips Ahoy and Oreos, but if those aren’t your jam feel free to add the cookies that are. You’re gonna be an icebox cake convert in no time.

What You’ll Need to Make Chocolate Chip Cookie & Oreo Icebox Cake

  • 1 pt. Heavy Cream
  • 1/2 cup powdered sugar
  • 1/2 tsp salt
  • 1/3 cup cream cheese
  • 1 tsp Vanilla Extract
  • Oreos/Chocolate Chip Cookies
  • ¼ Stick Butter
  • 1 tsp Lemon Juice

Steps for Making Chips Ahoy & Oreo Icebox Cake

  1. Whip 1 pint of heavy cream until medium peaks form.
  2. *This step is optional* Add ⅓ cup of cream cheese. This gives it a cheesecake texture.
  3. Mix until combined.
  4. Add 1 tsp Vanilla Extract and 1 tsp of Lemon Juice.
  5. Spread the chocolate and add sprinkles!
  6. Add all dry ingredients and mix until combined.
  7. Chop up 1 sleeve of Oreos and 1 Sleeve of Chips Ahoy, then crush.
  8. Melt 1/4 stick of butter and mix with crushed cookies.
  9. Line the bottom of the pan and crush with a flat surface. (I used the bottom of a cup!)
  10. Add Whipped cream and later cookies on top & repeat until pan filled.
  11. Decorate top layer with cookie mosaic ~*art*~
  12. Cover & refrigerate for at least 24 hrs or up until 3 days.
  13. Serve and enjoy!
