Filled with flavorful veggies, cheese, and meat, this salad is inspired by my favorite sandwich combo.

Classic Chopped Salad Recipe

Meet the salad version of my favorite sandwich of all time. The romaine gives it the perfect refreshing crunch and olives provide a salty, buttery bite, but you can really throw in whatever veggies you have in your fridge. I only added a little red onion and chopped it super finely so it wouldn’t be too overpowering. With creamy mozz and salami, it tastes just like my favorite sandwich—but I can eat so much more of it without getting too full.  

Ingredients for Classic Chopped Salad

  • 2 romaine heads

  • 1 ball fresh mozzarella

  • 1 red bell pepper 

  • 1 cup Castelvetrano olives

  • 1/2 red onion

  • 4-6 slices salami

For the miso vinaigrette

  • 1/3 cup olive oil
  • 2 lemons, juiced 
  • 1/4 cup red wine vinegar
  • 1/4 cup white miso paste
  • 1/3 cup nutritional yeast
  • 1 tablespoon dried oregano
  • 2 garlic cloves, grated with a microplane
  • 1/2 teaspoon salt

How to Make Classic Chopped Salad

  1. Cut the romaine heads, mozzarella, red pepper, olives, red onion, and salami into small, bite-size pieces.
  2. Add all of the salad ingredients to a large bowl. 
  3. Make the dressing. Whisk together all of the dressing ingredients until emulsified. 
  4. Pour the dressing over the salad ingredients and mix thoroughly to combine. Serve immediately.
