If you don’t like sauerkraut but crave a refreshing bite to add to your summer hot dogs, this is the salad for you. It’s so easy and fast to make, and pairs well with just about anything. It’s perfectly sweet and refreshing thanks to the raw beets and carrots, but offers a lot of flavor with a super-simple dressing. Use it on top of sandwiches, in bowls, or just on its own! If you don’t like beets, you could easily make this with just carrots (or vice versa).

Ingredients
- 2 large red beets
- 2 small golden beets
- 2 medium carrots, peeled
- ¼ red onion
- Juice of 1 lemon
- 3 tablespoons olive oil
- 1 garlic clove, grated
- 1 teaspoon salt
- ¼ teaspoon black pepper
Directions
Cut the stems off the beets, then wash and peel them. Using the wide holes of a box grater, grate the beets into a large bowl.
- Grate the carrots into the same bowl.
- Finely chop the red onion and add it to the bowl.
- Add the lemon juice, olive oil, garlic, salt, and pepper and stir well to combine everything.
- Serve on top of sandwiches, pita, salads, or just eat it on its own.
