People ask me a lot how many cucumbers we go through in my house on a weekly basis. The answer? Far too many to count—that’s how I know this salad was the perfect one for me. I was inspired by What’s Gaby Cooking one night on TikTok and immediately set out to make a cucumber salad with fresh crumbled Feta and a deliciously zesty vinaigrette.
Ingredients for Dill & Cucumber Pickle Salad
- 8 small cucumbers, finely chopped
- 1/2 cup (4 oz.) Feta, crumbled
- 2 tablespoons fresh dill, chopped
- Juice of two lemons
- 1/3 cup olive oil
- 1 tablespoon rice wine vinegar
- 2 garlic cloves, grated with a microplane
- 1/3 cup nutritional yeast
- 1/2 teaspoon salt
How to Make Dill & Cucumber Pickle Salad
- Combine the cucumber and feta in a large bowl.
- In a small bowl, whisk together the dill, lemon juice, olive oil, rice wine vinegar, garlic, nutritional yeast, and salt.
- Toss everything together and add more dill as desired. Enjoy!
Tip: Don’t let it sit too long in the fridge or it will pickle!
