One of my go-to summer salads is crisp, refreshing iceberg coated in a flavorful, garlicky vinaigrette. It comes together quickly and only requires a few staple ingredients. 

Garlic Girl Iceberg Salad Recipe

I LOVE iceberg lettuce. I’d much rather have crunchy iceberg in ribbons or small bites than any other green. It’s so refreshing, so crisp, and has the perfect little grooves to fit all of my favorite dressings.

This is one of the first salads my mother-in-law ever made for me, and probably the one that made me fall in love with her. Crunchy iceberg is mixed with a super simple vinaigrette packed with flavor (my garlic girls know). Serve it as a side, with a bunch of your favorite salads, or keep a big bowl to yourself. I won’t tell.

Ingredients for Garlic Girl Iceberg Salad

  • One head iceberg, chopped as desired (I prefer small bites)

  • Two lemons, juiced (about 1/2 cup to 1/3 cup)

  • 3 tablespoons olive oil

  • 1 1/2 tablespoon white vinegar or a healthy splash

  • 2 large cloves garlic, minced

  • 3/4 teaspoon salt

How to Make Garlic Girl Iceberg Salad

  1. Add all the lettuce to a large bowl.

  2. Whisk together all of the liquid ingredients and spices. Pour over the lettuce and toss to make sure everything is evenly coated. Enjoy!
