I made this lunch in 4 minutes and 33 seconds. That’s all it takes to have a delicious, green lunch packed with flavor on your plate. The goal is to get cucumbers in every bite, with flavor-packed avocado spread over freshly toasted bread. I’m calling it the GG Avocado Toast because it has so many of the same flavors as mygreen goddess, but in a totally different format. But I don’t need to sell you on it—stop reading and go make it!
Ingredients
1 avocado
1/2 teaspoon salt, plus more to season
1/2 teaspoon garlic powder
1/2 teaspoon black pepper, plus more to season
2 teaspoons freshlemon juice
1 teaspoon chopped fresh chives
1 teaspoon chopped fresh dill
1 Persiancucumber
1 slice sourdough bread, toasted
Directions
While the bread toasts, mash the avocado on plate with salt, garlic powder, black pepper, and lemon juice. Stir in the chives and dill.
Thinly slice the cucumber on a bias.
Spread an even layer of the avocado mash on your toast and top with a thin layer of cucumbers.
