Loaded Sweet Potato Snack Recipe

This is the perfect snack when you’re a little hungry but still crave something sweet. If you have a leftover baked sweet potato from dinner, this is a great way to make an easy snack out of it! The date caramel gives natural sweetness, while the yogurt makes it creamy and refreshing. It’s a filling, nutrient-dense recipe to give into your sweet tooth! 

Ingredients for Loaded Sweet Potato Snack

  • 1 sweet potato

  • ⅓ cup date caramel, divided

  • ¼ teaspoon ground cinnamon, divided

  • ½ cup Cocojune yogurt (or your favorite plain yogurt), divided

  • 3 tablespoons walnuts (or granola), divided

  • Sea salt

How to Make Loaded Sweet Potato Snack

  1. Preheat the oven to 400F and line a baking sheet with parchment paper. 

  2. Cut the sweet potato in half lengthwise and drizzle with olive oil and sprinkle with salt. Place the cut side down on the baking sheet. 

  3. Bake for 45 minutes to an hour, until the sweet potato is soft throughout and caramelized on top. 

  4. Let the potato rest until cool enough to handle, then slice each half down the middle. 

  5. Cover each half with 3 tablespoons date caramel, then sprinkle each with cinnamon. 

  6. Top each side with ¼ cup yogurt. 

  7. Chop up the walnuts and sprinkle on top of each half.

  8. Add another sprinkle of cinnamon, then a sprinkle of salt. Serve immediately.
