Nothing makes me happier than a plate filled with a rainbow of colors, especially when those colors are from fresh veggies. This is easy to accomplish with colorful salads, but what else can be made into a spectrum of tie-dye-inspired hues? Today's answer: bright, creamy hummus.
Hummus is the perfect base recipe to play with based on flavors you love or what you have in the fridge. You can add roasted garlic, fresh herbs, beets, or spices to get a unique tasteand color. These two hummus recipes are naturally colored, but so vibrant and fun to eat. What colors will you combine?

Ingredients
Roasted Beet Hummus
- 4 cloves garlic
- 1 medium beet, roasted and peeled
- Juice of 2 lemons
- 1/4 cup water, plus more as needed
- 1-15 1/2 oz. can chickpeas, drained
- 3 tablespoons tahini
- 1 1/2 tablespoons olive oil
- 1 teaspoon salt
Fresh Herb Hummus
- 2 cloves garlic
- 1/4 cup parsley
- 1/4 cup cilantro
- Juice of 1/2 lemon
- 1/4 cup water, plus more as needed
- 1-15 1/2 oz. can chickpeas, drained
- 3 tablespoons tahini
- 1 tablespoon olive oil
- 1/2 teaspoon salt
Directions
Roasted Beet Hummus
Wash beet and cut off stems. Wrap in aluminum foil and roast for 50-60 minutes at 400F°.
- Peel the beet (pro tip: use a paper towel to get the skin off fast) and cut into quarters.
- Pulse the garlic, beet, lemon juice, and water together in a blender (you can also use a food processor).
- Add the chickpeas, tahini, olive oil, and salt and blend once more. Add more water as needed until the hummus reaches the perfectly dippable consistency.
- Taste and adjust seasonings as needed. Serve with a drizzle of olive oil and a sprinkle of flaky salt.
Fresh Herb Hummus
Pulse the garlic, parsley, cilantro, lemon juice, and water together in a blender (you can also use a food processor).
Add the chickpeas, tahini, olive oil, and salt. Blend until smooth. Add more water as needed, until the hummus is the right consistency.
Taste and adjust seasonings as needed. Serve with a drizzle of olive oil and a sprinkle of flaky salt.

Tip
Make these on their own to serve with other dips or swirl them together for a delicious tie-dye appetizer.
