Vegan Caesar Salad Recipe

I made a new Vegan Kale Salad recently and since you loved my first one so much I had to share the updated recipe with you. And if you have been on the hunt for a creamy salad dressing packed with nourishing ingredients, this one's for you!

I first made this salad when my husband decided to go vegan. This vegan caesar salad dressing is even more delicious than the traditional recipe. For the base of this particular salad I used finely chopped brussel sprouts, green onion and kale, but you can use any greens you have in your fridge!

Ingredients for Vegan Caesar Salad

Salad Ingredients:

  • 1 bunch of Kale
  • 1 bunch of Green Onion
  • 1 bunch of fresh Brussel Sprouts 

Dressing Ingredients:

  • 1/4 cup of Hummus
  • 1 teaspoon of Mustard 
  • Juice of 2 Lemons
  • 2 cloves of minced Garlic
  • 2 tablespoons of Capers (chopped)
  • 1 tablespoon of Caper Juice (from the jar) 
  • 1 teaspoon of Salt 
  • 3 tablespoons of Olive Oil
  • 1/3 cup of Nutritional Yeast

How to Make Your Vegan Caesar Salad

  1. Finely chop your greens for the base of the salad. 
  2. In a small bowl, mix in the hummus and mustard.
  3. Using a lemon squeezer, juice the two lemons and add to the bowl. 
  4. Chop the capers finely and add a little bit of the juice. 
  5. Mince 2 cloves of garlic and place into the bowl, or more (we measure garlic with our heart around here)!
  6. Add in the salt, nutritional yeast and olive oil. Whisk until fully combined.
  7. Dress your salad, or put it in a mason jar until you are ready to serve it!
