Rainbow Veggie Hummus Sandwich

Savory Recipes
Without fail, if I go into the office I order this sandwich around 10:30. It’s filling, with just about every type of veggie I can fit, and has deliciously spicy condiments like horseradish and mustard. I order it so often that I have a few others in the office hooked, too. If you don’t live near a Lenwich or want to try your hand making this at home, here’s my best approximation—and boy is it good.

Ingredients
- 2 slices multigrain bread
- 2 tablespoons hummus
- 1 tablespoon Dijon mustard
- 1 tablespoon horseradish
- 1/2 ripe avocado, sliced
- 1/4 cup shaved iceberg
- 2-3 slices ripe beefsteak tomato
- 1 carrot, shaved with a mandoline
- 1 radish, shaved with a mandoline
- 1/4 cup sprouts
- 1 pickle, shaved with a mandoline
- 2 tablespoons sauerkraut
- Salt and pepper, to taste
Directions
- Place the bread on a piece of parchment paper.
- On one slice, spread a thick layer of hummus, and on the other, spread the mustard and horseradish in an even layer.
- Place the avocado slices over the hummus.
- On the side with the horseradish, layer the iceberg and tomatoes, then season with salt and black pepper. Add the pickles over the avocado, followed by the carrots, radishes, sprouts, and sauerkraut.
- Stack the tomato side over the other and fold the parchment paper to keep everything inside. Cut in half to serve.
