We always seem to have a stash of bananas in my kitchen. They don’t get eaten, I buy more, and then I’m left trying to figure out what to do with bananas that are just a little past their prime. Enter these chocolate banana brownies: Gooey, packed with chocolate, and studded with chocolate chips. When life gives you bananas, make these brownies.

Ingredients for Chocolate Banana Brownies

2 ripe or overripe bananas

1 1/2 cups chocolate chips, divided

2 sticks (½ cup) unsalted butter

1¼ cup granulated sugar

⅓ cup Dutch-processed cocoa powder

1 tablespoon vanilla extract or paste

2 large eggs
-
1 cup all-purpose flour

½ teaspoon salt
How to Make Chocolate Banana Brownies
- Preheat the oven to 350°F and line a 8” x 8” square pan with parchment paper.
- Combine 1 cup chocolate chips with the butter in a microwave-safe bowl and melt in the microwave, stirring occasionally so they don’t burn. Let cool slightly.
- Mash the bananas in a large bowl. Stir in the sugar and cocoa powder, then add the melted chocolate and mix to combine.
- Stir in the vanilla and eggs. Add the flour and salt and mix just until no streaks remain, then fold in the remaining ½ cup chocolate chips.
- Pour the batter into the prepared pan and bake for 40 minutes, until the edges are set and a bit of batter sticks to a toothpick when inserted in the center. Let cool, then slice.
