We always seem to have a stash of bananas in my kitchen. They don’t get eaten, I buy more, and then I’m left trying to figure out what to do with bananas that are just a little past their prime. Enter these chocolate banana brownies: Gooey, packed with chocolate, and studded with chocolate chips. When life gives you bananas, make these brownies.

Ingredients for Chocolate Banana Brownies

  • 2 ripe or overripe bananas

  • 1 1/2 cups chocolate chips, divided

  • 2 sticks (½ cup) unsalted butter

  • 1¼ cup granulated sugar

  • ⅓ cup Dutch-processed cocoa powder

  • 1 tablespoon vanilla extract or paste

  • 2 large eggs

  • 1 cup all-purpose flour

  • ½ teaspoon salt

How to Make Chocolate Banana Brownies

  1. Preheat the oven to 350°F and line a 8” x 8” square pan with parchment paper.
  2. Combine 1 cup chocolate chips with the butter in a microwave-safe bowl and melt in the microwave, stirring occasionally so they don’t burn. Let cool slightly.
  3. Mash the bananas in a large bowl. Stir in the sugar and cocoa powder, then add the melted chocolate and mix to combine.
  4. Stir in the vanilla and eggs. Add the flour and salt and mix just until no streaks remain, then fold in the remaining ½ cup chocolate chips.
  5. Pour the batter into the prepared pan and bake for 40 minutes, until the edges are set and a bit of batter sticks to a toothpick when inserted in the center. Let cool, then slice.
