Chocolate Chip Brioche French Toast

Chocolate chip brioche french toast is an easy, indulgent weekend breakfast idea that comes together quickly or can be made the night before. Better yet, it's a great way to involve kids in the kitchen.

Chocolate Chip Brioche French Toast Recipe

Any dish that can double as a breakfast, brunch, or dessert is a favorite for me. I make this recipe whenever I visit my parents upstate and serve it alongside fresh fruit and yogurt for my kids. You can add as many or as little chocolate chips as you like, but I highly recommend many. It's like a bread pudding married french toast and had a sweet, delicious baby.

Ingredients for Chocolate Chip Brioche French Toast

  • 1 loaf brioche (I use a14 oz loaf from Whole Foods)
  • 6 whole eggs
  • 2 egg yolks
  • 3/4 cup heavy cream (whole milk works too)
  • 1 teaspoon vanilla paste or extract
  • 2 tablespoons maple syrup
  • 1/4 teaspoon salt, plus more for garnish
  • 1 cup dark chocolate chips
  • 2 tablespoon granulated sugar

How to Make Chocolate Chip Brioche French Toast

  1. Preheat the oven to 375°F and line a loaf pan with parchment paper.
  2. Cut brioche into 1-2 inch cubes and place in a large bowl.
  3. In a medium bowl, whisk together eggs, egg yolks, heavy cream, vanilla, maple syrup, and salt.
  4. Pour custard mixture over brioche and combine so that all of the bread is evenly coated.
  5. Let sit for at least 1 hour or overnight in the fridge.
  6. Spoon the brioche into the loaf pan, sprinkling chocolate chips liberally as you go.
  7. Pour any remaining liquid on top of the bread. Sprinkle with sugar and a pinch of salt.
  8. Bake for 35 minutes or until fully cooked. Serve for breakfast, lunch, dinner, or dessert.
