Chocolate Chip Brioche French Toast

Any dish that can double as a breakfast, brunch, or dessert is a favorite for me. I make this recipe whenever I visit my parents upstate and serve it alongside fresh fruit and yogurt for my kids. You can add as many or as little chocolate chips as you like, but I highly recommend many. It's like a bread pudding married french toast and had a sweet, delicious baby.

Ingredients
- 1 loaf brioche (I use a14 oz loaf from Whole Foods)
- 6 whole eggs
- 2 egg yolks
- 3/4 cup heavy cream (whole milk works too)
- 1 teaspoon vanilla paste or extract
- 2 tablespoons maple syrup
- 1/4 teaspoon salt, plus more for garnish
- 1 cup dark chocolate chips
- 2 tablespoon granulated sugar
Directions
Preheat the oven to 375°F and line a loaf pan with parchment paper.
- Cut brioche into 1-2 inch cubes and place in a large bowl.
- In a medium bowl, whisk together eggs, egg yolks, heavy cream, vanilla, maple syrup, and salt.
- Pour custard mixture over brioche and combine so that all of the bread is evenly coated.
- Let sit for at least 1 hour or overnight in the fridge.
- Spoon the brioche into the loaf pan, sprinkling chocolate chips liberally as you go.
- Pour any remaining liquid on top of the bread. Sprinkle with sugar and a pinch of salt.
- Bake for 35 minutes or until fully cooked. Serve for breakfast, lunch, dinner, or dessert.
