Biscoff (aka cookie butter) is one of my absolute favorite ingredients. We feature it often in ourbite-size cupcakes, and I make desserts at home with it any chance I get. To make the perfect bite of my favorite flavor, I decided to mix together the creamy spread with oat flour to create a delicious two-bite, three-ingredient truffle. They’re so easy and would be great to make with kids. Try it as-is or add puffed quinoa for crunch, and you have a delicious, easy treat in minutes.

Ingredients
- 1 - 14.1 oz jar Biscoff or cookie butter
- 1¾ cups oat flour
- ¼ teaspoon salt
- 1 cup Hu gems (use code BAKEDBYMEL for 20% off!)
- Flaky sea salt, to garnish
Directions
Microwave the Biscoff for 30 seconds until melted. You want it to reach a liquid consistency. (Make sure to remove all the foil before you microwave!)
- Pour the Biscoff into a large mixing bowl, scraping out the sides with a spatula.
- Stir in the oat flour and salt. Mix until combined, and let sit for about 10-20 minutes, until it reaches room temperature.
- Melt the chocolate in the microwave. Roll the Biscoff mixture into 1” balls and dip them into the melted chocolate.
- Place the truffles on a baking sheet lined with parchment paper. Sprinkle with sea salt and let cool.
