French Toast Bites Recipe

I love involving my kids in the kitchen however I can, whether by cracking eggs open, whisking ingredients together, or sneaking tastes for quality control. This is one of my favorite recipes to make with them on early weekend mornings. With fluffy brioche (you could also use challah) and a custardy outside filled with maple syrup, these bites have everything you’d want in a delicious Saturday breakfast. 

Ingredients for French Toast Bites

  • 4 large eggs

  • 3/4 cups whole milk

  • 1 teaspoon vanilla paste or extract

  • 2 tablespoons maple syrup 

  • 1/4 teaspoon salt

  • 3 - 1” thick slices of brioche, cut into 9 cubes each (about 1” by 1” cubes)

  • 1 tablespoon unsalted butter, plus more as needed

How to Make French Toast Bites

  1. In a large bowl, whisk together the eggs, milk, vanilla, maple syrup, and salt. 

  2. Add the brioche cubes to the bowl and let it soak up the liquid, about 5 minutes. 

  3. Melt the butter on a large frying pan over medium-low heat. Add the brioche to the pan (you may need to do it in batches) and cook for about 5 minutes on each side, until golden brown. Serve immediately.
