No-Bake Giant Peanut Butter Cup

If you love peanut butter and chocolate like I do, this dessert is for you. This flavor combination is one of my favorites, in fact, it was one of our first cupcake flavors too! This nod to the classic candy bar will send you back in time and remind you why you loved those peanut butter cups growing up!

No-Bake Giant Peanut Butter Cup

Ingredients

    • 4 tablespoons unsalted butter
    • 3 sleeves of Whole Foods Brownie Thins (or Oreos, no cream!)

    • 1/2 cup of crushed graham crackers
    • 1/2 cup of confectioner's sugar
    • 1-16 ounce jar peanut butter, melted
    • 1 teaspoon vanilla extract
    • 1 teaspoon salt

    • 1 cup chocolate chips 
    • 1/4 cup peanut butter 
    • Flaky sea salt, for garnish

    Directions

      1. Using a dry blender, add in three sleeves of brownie thins (or Oreos!) and pulse until it becomes a sand-like texture.

      2. Melt the butter in a microwave-safe bowl for 2 minutes.
      3. Combine the crushed brownie thins with the melted butter and place into a 9-inch pie crust and press down with a flat surface (I use a glass cup).

      1. Using the blender, blend 3 sleeves of graham crackers. Measure out 1/2 cup of the crushed graham crackers.

      2. Melt your peanut butter in a microwave-safe bowl in the microwave. In increments of 30 seconds, continue to stir in between.
      3. In a large bowl, pour in your peanut butter, confectioners sugar, crushed graham crackers, vanilla and salt, stir together until fully combined.
      4. Pour the peanut butter mixture over the brownie crust and spread out evenly.

      1. Melt 1 cup of chocolate chips in a glass bowl over a boiling pot of water. Continue to stir until smooth.

      2. Mix in 1/4 cup of peanut butter and stir until combined.
      3. Pour the peanut butter-chocolate mixture over the top of the pie, and sprinkle with flaky sea salt.
      4. Place in the refrigerator for 3-4 hours (or until fully cooled), slice & serve!
