Overnight Croissant Bake Recipe

Whenever I have guests spending the night, I seek out easy, delicious meals to make in the morning. This croissant bake is easy to whip up and is a great way to get kids involved in the kitchen without driving you crazy. If you only have fresh croissants, use those; feel free to branch out and use chocolate croissants, too (and then maybe omit the chocolate chips). You can also make this the night before, refrigerate it, and bake in the morning for a stress-free wake-up. Double it, triple it, do whatever you need to feed all the sleepy mouths in your house.

Ingredients for Overnight Croissant Bake

  • 4 stale croissants
  • 4 eggs
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 tablespoons granulated sugar
  • 1/3 cup chocolate chips
  • Cooking spray

How to Make Overnight Croissant Bake

  1. Preheat oven to 350°F.

  2. Cut the croissants into 1-2” pieces and set aside.

  3. Whisk the eggs, milk, vanilla, salt, and sugar together in a medium bowl.

  4. Add the croissants and chocolate chips to the bowl.

  5. Let the croissants sit in the egg mixture for at least 20 minutes up to a few hours to soak up the egg and milk mixture. 

  6. Grease a 3 x 6 mini loaf pan (or you can make them as 3-4 muffins too!) and add the croissant mixture to the pan.

  7. Bake for 35-40 minutes, until golden. Serve immediately, while still warm.
