Rainbow Pancakes Recipe

I make pancakes every week for my kids, sometimes more often than that. They’re the perfect way to sneak nutrients into meals (especially for my kids, who can be fairly picky eaters). You can blitz up banana-filled pancakes in a blender or use up leftover quinoa for protein-packed chocolate pancakes. Or you can just have fun with it and make these perfect pancakes filled with colorful sprinkles. They’re light, fluffy, and exactly what you want to make on a weekend morning. 

Ingredients for Rainbow Pancakes

  • 1 cup whole milk
  • 1 egg
  • 2 tablespoons olive oil
  • 2 tablespoons sugar
  • Juice of 1/2 lemon
  • 1 teaspoon vanilla
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup rainbow sprinkles

How to Make Rainbow Pancakes

  1. Whisk together the milk, egg, olive oil, sugar, lemon juice, and vanilla. Add the flour, baking powder, and salt and whisk until smooth.
  2. Fold in the rainbow sprinkles until well combined.
  3. Heat a large griddle over medium heat. Using an ice cream scoop to portion the batter, scoop batter out onto the griddle. When bubbles begin to form on the top of the pancake, flip to the other side.
  4. Cook for about a minute more, until the pancake is fully cooked.
  5. Serve immediately or save for later in the fridge (I like to pack it in my kids' lunches!).
