Crispy Potato Wedges with Creamy Herb Dip

Here’s my simple trick to get crunchy, crispy potato wedges without deep frying.

Crispy Potato Wedges with Creamy Herb Dip Recipe

For a long time, one of my family’s favorite restaurants in the Catskills was The Old Homestead. I grew up going there, knowing all of the servers by name, and craving the roasted potatoes when we weren’t there. Unfortunately, a fire burned down the old location a few years ago, but they just reopened in a new location. Naturally, we had to check it out on our most recent trip to the Catskills. It was just as I remembered, and to my surprise, my oldest actually ate the roasted potatoes. In that moment, I realized I needed to recreate them at home for us to enjoy year-round. I made them in the air fryer with a light coating of corn starch to get them crispy, then served them with the most delicious herby dip that is packed with protein. If we can’t be in the Catskills, this is the next best thing.

Ingredients for Crispy Potato Wedges with Creamy Herb Dip

  • 3 large Yukon gold potatoes (a little more than a pound)
  • 3 tablespoons avocado oil
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/4 cup corn starch

For the creamy herb dip

  • 2 lemons, juiced
  • 3/4 cup whole milk cottage cheese
  • 1/2 cup pesto
  • Splash of water

How to Make Crispy Potato Wedges with Creamy Herb Dip

  1. Cut the potatoes into wedges. Put the potatoes into a large bowl and cover with avocado oil. Season with salt, pepper, and garlic powder. Mix together with your hands.
  2. Coat the potatoes in half of the corn starch, mix to evenly combine, and add the rest of the corn starch. Keep going until there is no white powder remaining.
  3. Preheat the air fryer to 420°F (if necessary).
  4. Cook the potatoes in the air fryer for 27 minutes, or until crispy.
  5. While the potatoes cook, blend all of the dip ingredients together in a high-powered blender until smooth.
  6. Serve potatoes immediately with the creamy herb dip. Enjoy!
