Angel Hair with Vegan Pesto (Green Goddess)

The best thing about my green goddess recipe is that it’s packed with nutrients. I mean, it has a whole cup of spinach blended in and you’d never know! I love how good it is for you and how flavorful it is, making it perfect to on top of just about anything. My kids love to eat pasta, so we have just about every shape imaginable in our pantry. Why not combine the two? Pick your favorite pasta, blend up this quick vegan pesto, and enjoy a nourishing dinner in just a few minutes.

Ingredients

16 oz. angel hair pasta
For the sauce:
- 1 cup basil leaves
- 1 cup fresh spinach
- 4 garlic cloves
- Juice of 2 lemons
- 1/3 cup olive oil
- 1/4 cup pine nuts
- 1/3 cup nutritional yeast
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 2 tablespoons rice vinegar
- Scallion tops (the green part if you have them, if not just use 2 whole trimmed scallions)
- ¼ cup fresh chives
Directions
- Boil a large pot of water over high heat. Season with salt.
- Add the angel hair to the boiling water and cook for 4 minutes, until tender.
- Drain the pasta and place in a large bowl.
- Meanwhile, pulse all of the sauce ingredients together in a high-powered blender until smooth.
- Pour the pesto over the pasta a little at a time until all of it is evenly covered.
