This is one of our favorite dinner sides. The other night, Adi made it with roasted garlic, spreading the garlic on top. It’s so easy and delicious. All you need is a potato (can be any kind you like, including sweet potatoes!), a little salt, and a little oil. Top them with your favorite salads or serve with a protein and you have the perfect meal.
Ingredients
1 large Yukon Gold potato
½ teaspoon salt
Avocado oil spray
Directions
Preheat the oven to 425F and line a baking sheet with parchment paper.
Cut the potato in half lengthwise and sprinkle the inside with salt.
Flip the potatoes so they’re flesh-side down and season the other side with salt.
Spray with avocado oil.
Bake the potatoes for one hour, until tender inside and golden bown on the side touching the pan.
