The Best Chicken Salad (Chicken Soup Chicken Salad)

This is the only chicken salad recipe you’ll ever need. If you’re makinghomemade chicken stock, it’s the perfect way to use some of the resulting tender, juicy chicken and give yourself a little bite to eat while you cook. It’s super creamy but doesn’t have any dairy thanks to a special, secret ingredient. If you’re just craving chicken salad, feel free to swap out the chicken with rotisserie or leftover chicken or make thisdilly chicken salad instead.

Ingredients
- 1½ cups shredded chicken, ideally from the homemade chicken stock recipe
- Juice of 1/2 lemon
- 1¼ teaspoon salt
- ¼ teaspoon black pepper
- 1 teaspoon garlic powder
- 1 celery stalk
- 1/2 pickle (I used a half sour)
- 3 scallions
- 2 tablespoons chopped chives
- 1 1/2 tablespoons chopped dill
- 1 tablespoon Dijon mustard
- 2 tablespoons tahini
Directions
- Add the chicken to a large bowl (if from the stock recipe, add a tablespoon or two of hot stock to keep it juicy).
- Stir in the lemon juice, salt, black pepper, and garlic powder.
- Finely chop the celery, pickle, and scallions and add to the bowl, along with the chives and dill.
- Stir in the mustard and tahini until well combined. Serve on toasted bread or in lettuce cups.
