I have also made a couple of delicious Ukrainian dishes as a way to pay tribute to the hardships being faced there right now. Borscht is a traditional Ukrainian soup that gets its distinct color from red beets. While this may have been my first time making Borscht, it was not my last (I made it twice in one week, that is how good it was). It’s also incredibly nutritious - and delicious!This soup can be stored in the refrigerator forup to 5 days. Try this recipe and please consider making a donation to the families in Ukraine.

Ingredients
- 1 medium sized Yellow or Purple Onion
- 4 stalks of Celery
- 2 Carrots
- 5 cloves of Garlic
- 3 medium sized Red Beets shredded or finely chopped
- 6 cups of Vegetable Broth
- 3 small Yukon Gold Potatoes chopped into 1/2 inch cubes
- 1 can of Cannellini Beans
- 1/4 cup of chopped Green Cabbage
- 1 cup of your favorite Tomato Sauce (I always choose Raos)
- 1 ½ teaspoons of Garlic Powder
- 1 teaspoon of Salt
- 1 teaspoon of Turmeric
- 1 teaspoon of Cumin
- 1/2 teaspoon of Pepper
- 2 Bay Leaves
- 2 tablespoons of White Vinegar
- Juice of a 1/2 of Lemon
- Optional: 1/2 pound of Ground Beef seasoned with salt and pepper and rolled into little meatballs
- 2 tablespoons of Parsley
- 1 tablespoon of Sour Cream
Directions
Chop the onions, carrots, celery and sauteé with 3 tablespoons of olive oil for about 8 minutes or until tender.
- Add the chopped garlic and sauteé for 2 more minutes.
- Add in the shredded beets, diced potatoes, cabbage, and rinsed beans, and stir until combined.
- Add the vegetable broth and tomato sauce.
- Add in the garlic powder, salt, turmeric, cumin, pepper, and bay leaves. Stir until combined.
- Pour and stir in lemon juice and vinegar. Continue stirring together.
- Place in the meatballs or diced meat of your choice (If you use cubed meat, braise it first!).
- Cover and let it simmer for 1-3 hours over low heat.
- Add salt to taste.
- Garnish with as much parsley and sour cream as desired. Enjoy!
