I’m always looking for quick easy meals that my kids will love. Having delicious, nourishing recipes in your back pocket for busy days relieves so much stress and just makes people feel good. These chicken meatballs are comforting, and filling, and even my pickiest eater happily ate them up. The best part about meatballs is that they store so well as leftovers, so whether you eat them with pasta or on their own for dinner, you can eat them on top of a salad or as a snack the next day.

Ingredients
- 1 lb. ground chicken
- 1 teaspoon oregano
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 egg
- 1/4 cup breadcrumbs, plus 1 cup for rolling
- 1/4 cup nutritional yeast
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- Avocado oil, for frying
- Marinara sauce, to serve
Directions
- Mix the chicken, oregano, salt, garlic powder, egg, breadcrumbs, nutritional yeast, black pepper, and olive oil together in a large bowl.
- Use a scoop to portion out 2 tablespoon scoops of the chicken mixture. Roll into a ball.
- Place 1 cup of breadcrumbs on a plate and roll each meatball in the breadcrumbs to fully coat.
- Heat avocado oil in a large skillet (enough to cover the bottom of the pan by ¼”).*
- Once the oil shimmers, add the meatballs to the oil. Cook for 3-5 minutes on each side until browned.
- Heat your favorite sauce in a saucepan over medium heat. Add the meatballs to the sauce and keep over heat until ready to serve.
*As an alternative, you can place the meatballs on a baking sheet and spray with oil, then bake at 400°F for 18-20 minutes, flipping halfway through, until fully cooked.
