Classic Chopped Salad

Meet the salad version of my favorite sandwich of all time. The romaine gives it the perfect refreshing crunch and olives provide a salty, buttery bite, but you can really throw in whatever veggies you have in your fridge. I only added a little red onion and chopped it super finely so it wouldn’t be too overpowering. With creamy mozz and salami, it tastes just like my favorite sandwich—but I can eat so much more of it without getting too full.

Ingredients
- 2 romaine heads
- 1 ball fresh mozzarella
- 1 red bell pepper
- 1 cup Castelvetrano olives
- 1/2 red onion
- 4-6 slices salami
For the miso vinaigrette
- 1/3 cup olive oil
- 2 lemons, juiced
- 1/4 cup red wine vinegar
- 1/4 cup white miso paste
- 1/3 cup nutritional yeast
- 1 tablespoon dried oregano
- 2 garlic cloves, grated with a microplane
- 1/2 teaspoon salt
Directions
Cut the romaine heads, mozzarella, red pepper, olives, red onion, and salami into small, bite-size pieces.
- Add all of the salad ingredients to a large bowl.
- Make the dressing. Whisk together all of the dressing ingredients until emulsified.
- Pour the dressing over the salad ingredients and mix thoroughly to combine. Serve immediately.
