Dirty Cabbage

This is one of the easiest meals you can make. All you have to do is throw everything in a pot and you’re practically finished. It tastes just like melted cabbage, with the cabbage tenderized by the broth and juices from the beef. Add extra broth to make it even soupier, and serve with rice if you have it. If you don’t, it’s just as good without it. 

Dirty Cabbage

Ingredients

  • 1 lb. ground beef

  • 1 shallot

  • 1/2 green cabbage

  • ½ medium carrot, peeled

  • 1 teaspoon salt

  • 2 garlic cloves, grated

  • Black pepper

  • 1 cup bone broth

Directions

  1. Heat a saucier over medium heat and add the beef. 
  2. Cook, trying not to stir too much, for a few minutes until the beef is browned. 
  3. While the beef cooks, chop the shallot, cut the cabbage into ribbons ½” wide and 3” long, and grate the carrot using the wide holes of a box grater. 
  4. Once the beef is browned, carefully pour the juices into a small bowl. Let cool so it solidifies, then throw it away.
  5. Add the shallot, cabbage, and carrots to the pot and season with salt. Add the garlic and a few turns of black pepper, then stir to combine.
  6. Pour in the bone broth and cover, lowering the heat to medium-low. Once the broth simmers, lower the heat again to low, and cook for 1-2 hours, until you’re ready to serve.
