I am a huge fan of anything you can zhuzh up a pita with. I’m an evenbigger fan of anything that can be made quickly while impressing guests. This recipe is it, friends. Tzatziki only takes a few ingredients to make and is great for entertaining, dressing up a grain bowl, spreading on a sandwich…the list goes on (I haven’t yet found the end of its uses). Feel free to play around with this recipe by adding spices (lemon-pepper is a particularly good addition) and herbs (dill is often a favorite).

Ingredients
- 1 1/2 cups plain Greek yogurt (I use this kind)
- 1 baby cucumber
- 2 garlic cloves, grated with a microplane
- 1 lemon
- 1/2 teaspoon salt
Directions
Put the yogurt in a small bowl.
- Finely chop the cucumber (grating works too if you don't feel like chopping) and add it to the bowl.
- Add the garlic to the bowl. Juice the lemon into the bowl and stir together. Season with salt, taste, and adjust seasoning as needed.
