We’ve all been there—craving a Green Goddess, but you just used up the last of the garlic and ran out of basil. With the new Baked by Melissa x Kosterina Green Goddess Extra Virgin Olive Oil, making this iconic dressing has never been easier. The flavor-packed oil adds brightness and depth, with the lemony, garlicky taste we all know and love. And it blends together in a snap, so you can start dressing and dipping faster than ever.

Ingredients
For the salad
- 1 small head green cabbage
- 3-4 mini cucumbers (or 1 large cucumber)
- 1/4 cup chives
- 1 bunch scallions
For the dressing
- 1/4 cup Kosterina x Baked by Melissa Green Goddess Olive Oil
- Juice of 1½ lemons
- 2 tablespoons rice vinegar
- 1/4 cup raw, unsalted cashews
- 1/3 cup nutritional yeast
- 1 cup fresh spinach
- 2 tablespoons fresh chives
- 1 teaspoon salt
Directions
Finely chop the cabbage and cucumbers into ⅛”-size pieces and add to a large bowl. Chop the chives and scallions and add them to the bowl.
- Add the dressing ingredients to a blender in the order listed, then blend on high until completely smooth. No green flecks should remain.
- Pour the dressing over the salad and mix well to evenly coat. Serve with your favorite tortilla chips.
