As much as I love salad, I also love pasta. I created a variation of myGreen Goddess Salad recipe to use on pasta and topped it with my latest obsession: toasted garlicky panko breadcrumbs. Put the red sauce back on the shelf, and give this delicious AND nutritious Green Goddess pasta a try.

Green Goddess Pasta

Ingredients

    • 2 tablespoons of Avocado Oil
    • 1 medium Yellow Onion
    • 5 cloves of roughly chopped Garlic
    • 1 head of chopped Broccoli 1-inch pieces (about 6 cups)
    • 2 cups of Vegetable Broth
    • Juice of a 1/2 of Lemon
    • 1/2 teaspoon of Salt
    • 1/4 teaspoon of ground Black Pepper
    • 1/3 cup of raw Cashews
    • 1 cup of Spinach 
    • 1/2 cup of Nutritional Yeast
    • 2 teaspoons of Garlic Powder
    • 1/4 cup of Chives (garnish) 
    • Pasta of your choice!

    • 2 cloves of minced Garlic
    • 3 tablespoons of Avocado Oil
    • 1 cup of Panko
    • 1/4 teaspoon of Salt

    Directions

    1. Add the minced garlic and oil to a small pan, cook until bubbles form. Add in the panko and toast on medium heat (If the bread crumbs are dry add more olive oil 1 teaspoon at a time).

    2. Season the panko with salt and pepper to taste.
    3. Keep flipping the breadcrumbs until they are at desired toastiness. Set aside to garnish at the end.
    4. In a large pan, sauté the yellow onion with avocado oil until lightly browned. It should take around 10 minutes.
    5. Season the onion with salt and pepper to taste. Add the chopped garlic and cook for 2-3 minutes.
    6. Chop your broccoli into 1 ½ inch pieces and add to the pan.
    7. Add in the vegetable broth and cover for 10 minutes, until broccoli is bright green and fork tender.
    8. In a blender, add the contents of the pan: lemon juice, salt, ground pepper, cashews, spinach, nutritional yeast, and garlic powder. Blend until smooth (If it is having a hard time blending, add in 1 tablespoon of olive oil at a time).
    9. Taste your Green Goddess Sauce and add in 1/2 teaspoon of salt if needed.
    10. Cook your pasta of choice 2-3 min less than instructions on the box, and reserve 1/2 cup of pasta water to mix in with the Green Goddess Sauce, and mix together.
    11. Combine the cooked pasta and Green Goddess Sauce. Cook over medium heat until pasta is fully cooked, about 3-5 minutes.
    12. Plate your pasta and garnish with the garlicky panko breadcrumbs and chives.
    13. Enjoy!
