Healthy Blender Pancakes

My biggest cooking hack is a blender. If it can go in a blender, it will be going in a blender (not to mention, cleaning it is as easy as soap and water and the push of a button). That is why on a busy morning, we make pancakes in (you guessed it) the blender! This recipe is delicious, and knowing my kids, they are going to be eating a ton, so why not make them healthy? Make these nutritious pancakes! Another hack is making them into fun shapes—my kids love them even more!

Ingredients
- 1 banana
- 1 egg
- 2 tablespoons melted coconut oil
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons almond butter
- 2 tablespoons maple syrup
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 1/4 cups oats
- About 2/3 cup oat milk (use enough so that it all blends together)
- 1 cup chocolate chips (optional)
Directions
Add the banana and egg to a blender.
- Using a microwave-safe bowl, melt the coconut oil (microwave in 15-second increments).
- Add the coconut oil to the blender along with salt, almond butter, maple syrup, baking powder, baking soda, and oats.
- Add 2/3 cup of oat milk or milk of your choice and blend. Add more of the oat milk until it is a thick pancake batter consistency.
- Heat a nonstick pan over medium heat. Pour in the pancake batter. Add the chocolate chips (or other inclusions if you'd like!) immediately after placing your batter on the pan.
- Once you see bubbles, flip the pancakes and cook for another 1-2 minutes.
- Serve & enjoy!
