Herby Slaw

You already know that I love an easy slaw. (Here’s another, and another, and another.) As long as you have a cabbage and a few herbs, you can make just about anything. This is as easy as it gets—a simple dressing made with pantry ingredients, one kind of cabbage, and all the herbs I had in my fridge. It’s great in a wrap with your fave protein or as a dinner side.

Herby Slaw

Ingredients

  • 1 green cabbage, shredded

  • Large handful of parsley

  • Large handful of cilantro

  • Juice of 2 lemons

  • 1 teaspoon salt

  • Black pepper

  • ⅓ cup olive oil

  • 1 shallot, finely chopped

  • 1 tablespoon Dijon mustard

  • 3 tablespoons nutritional yeast

Directions

  1. Use a sharp knife, mandoline, or Y peeler to shred the cabbage. Add it to a large bowl. 
  2. Roughly chop the parsley and cilantro and add it to the bowl with the cabbage. 
  3. In the same bowl, add the lemon juice, salt, a few turns of black pepper, olive oil, shallot, mustard, and nutritional yeast. 
  4. Use a spatula to mix the slaw so everything is well combined. 
  5. Serve immediately and store any leftovers in the fridge in an airtight container for up to 3 days.
