Kohlrabi Slaw

I love kohlrabi. Add a squeeze of lemon and a pinch of salt and you have the perfect snack. (Just like carrot sticks!) Combining thin kohlrabi matchsticks with thin carrot matchsticks makes the perfect slaw. It gets better as it sits, so you can make before everyone arrives, then throw the mixing bowl on the table to serve. If you’ve never had kohlrabi, now’s the perfect excuse to try it.

Kohlrabi Slaw

Ingredients

  • 2 bulbs kohlrabi, peeled and cut into matchsticks

  • 2 carrots, peeled and cut into matchsticks

  • 1 tablespoon fresh oregano

  • 4 scallions, trimmed and cut into ¼” pieces

  • Juice of 2 lemons

  • ¼ cup olive oil

  • 1 tablespoon red wine vinegar

  • 1 teaspoon garlic powder

  • 2 tablespoons nutritional yeast

  • ½ teaspoon dried oregano

Directions

  1. Add the kohlrabi, carrots, oregano, and scallions to a large bowl.
  2. In a small jar, combine the lemon juice, olive oil, red wine vinegar, garlic powder, nutritional yeast, and dried oregano and whisk until smooth. 
  3. Pour the dressing over the salad and mix well to combine. 
  4. Store in an airtight container in the fridge for up to 3 days.
