Make-Ahead French Toast

Easy, delicious French toast is the perfect thing to pack in your kid’s lunch. They’ll look forward to it all day, and you know they’ll come home with an empty Thermos instead of a half-eaten meal. My kids love it, and it’s so easy to make ahead for the week on Sundays. Your life just got so much easier.

Ingredients
6 large eggs
1 cup whole milk
2 teaspoons vanilla paste
1 tablespoon maple syrup, plus more to serve
Pinch of salt
6 slices of your kids’ favorite bread
Directions
- Add the eggs, milk, vanilla, syrup, and salt to a quarter sheet pan and mix together with a fork until combined.
- Cut the slices of bread in half and place on the egg mixture in a flat layer.
- Let sit for 5 minutes, then flip each piece of bread. Soak for at least 10 minutes, up to an hour, on the other side so the bread absorbs the egg mix.
- When you’re ready, heat a frying pan over medium-low heat. Add butter to the hot pan, then add the bread. Cook for 5 minutes on each side, or until golden brown.
- Transfer the French toast to a Pyrex container and let cool. Cover and refrigerate for up to 5 days.
- To pack in my kids’ lunches, I heat a Thermos with boiling water, dry it, then cut the French toast into cubes before adding it to the Thermos. I send a small container of maple syrup to have with it.
