No-Bake Date Cookies

These no-bake date cookies are delicious AND nutritious. They’re the perfect after-dinner snack to satisfy that need for something sweet. The best part? You don’t even need an oven to make them!

Ingredients
- 8 pitted dates
- 1/2 cup oats
- 1 cup peanut butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 2 tablespoons maple syrup
- 2 cups chocolate chips
- Flaky sea salt, for garnish
Directions
Add 1/2 cup of oats to a dry blender and blend until it becomes a flour. Empty into a separate bowl.
- Add 8 pitted dates to a food processor and blend on high.
- Add in the peanut butter, vanilla extract, salt, and maple syrup to the food processor and blend on high. Scrape the sides, and continue to blend until it has a clay-like consistency.
- Add in 1/4 cup of the oat flour, mix until it is fully combined!
- Scoop with a spoon and shape into a disc. Refrigerate until they are chilled.
- Melt down the chocolate chips in a heat-safe bowl over boiling water.
- Top your cookies with a dollop of chocolate and spread.
- Sprinkle a small pinch of flaky sea salt over the cookies.
- Let them cool and serve!
