No-Oat Granola

Directions

1. Preheat the oven to 350°F and line a baking sheet with parchment paper. 

2. Place the cashews and walnuts on a cutting board and roughly chop. (You can also use a jar to crush them.) Add them to a large bowl with the almonds, coconut, sesame seeds, and pumpkin seeds.

3. Stir in the honey, avocado oil, salt, cinnamon, and vanilla paste.
4. Mix well to get everything fully coated.
5. Place the mixture in a flat layer on the baking sheet and bake for 27 minutes, until golden brown and sort of like a brittle. Let cool completely.
6. Break it up into smaller pieces. Store in an airtight container for up to 5 days, if it lasts that long.
