Pesto Green Beans

This is the salad of the summer. Eat it warm as a side, cold as a salad, or pack it with you for a picnic. It takes 15 minutes to make from start to finish and only requires one bowl. What’s better than limited dishes and a side that will make everyone happy?

Ingredients
12 oz. bag green beans
Juice of ½ lemon
½ teaspoon salt
Black pepper
2 garlic cloves, grated
2 tablespoons olive oil
¼ cup your favorite store-bought pesto
Directions
- Bring a large pot of water to a boil.
- Cut the beans into 1-2” pieces and add to the water. Boil for 3 minutes, until the beans are tender and bright green.
- While the beans cook, whisk together the lemon juice, salt, a few turns of black pepper, garlic, olive oil, and pesto in a large bowl.
- Drain the beans and transfer directly to the bowl. The heat will help the garlic bloom.
- Serve immediately as a side, or serve cold as a salad.
