Purple Potato Gnocchi

Pair gnocchi with your favorite sauce (like this) and it’s an instant weeknight favorite. I had leftover mashed purple potatoes in my fridge from dinner the night before and wanted to repurpose them into something new—the results were delicious. If you don’t have leftovers, steam a few potatoes of your choice and mash them with a fork to start. And don’t limit yourself to purple—you can just as easily use Russets, Yukon Golds, or whatever potatoes you love.

Ingredients
- 1½ cups leftover mashed potatoes (or 2 large steamed potatoes, mashed)
- 1 egg
- ½ teaspoon salt
- 1½ cups flour (plus more for dusting)
Directions
Mix the potatoes and egg together and season with salt. (If you started with steamed potatoes vs. mashed potatoes, adjust seasonings to taste—you may want to add more! Hopefully your mashed potatoes are already seasoned.)
- Add the flour ¼ cup at a time, using your hands to knead into a dough. Continue to add flour until the dough no longer sticks to your hands and has a Play Dough-like consistency.
- Roll the dough into a ball and knead for about 5 minutes, adding flour as needed to prevent it from sticking to your surface.
- Set a large pot of water over high heat and bring to a boil. While the water heats, divide the dough into 8 equal pieces. Roll each piece into snakes, about ¾” in diameter. Add a little flour so they don’t stick together.
- Use a bench scraper or knife to cut the snakes into 1” long pieces. Transfer the gnocchi to a bowl lined with a tea towel.
- Season the water with salt and lift the tea towel out of the bowl. Tip it into the boiling water and cook for 2-3 minutes, until the gnocchi start to float.
- Use a fine mesh strainer or spider to remove the gnocchi from the pot. Transfer to a mixing bowl and drizzle with olive oil. Serve with your favorite sauce (I used this one).
