This is an easy, nearly three-ingredient meal (you know the drill, condiments don’t count) that’s perfect to make on a cold day when you’ll be inside and want to fill your home with incredible aromas. I cooked mine for 4 hours; you can cook it even longer if you want. The meat gets so tender and juicy, perfect for eating with potatoes or a side salad. It’s the easiest braised beef recipe you’ll ever find.
Ingredients
2 lbs. boneless chuck short ribs
Salt & pepper
2 teaspoons avocado oil
3 cups vegetable broth, enough to cover the meat
2 packets French onion dip mix (4 tablespoons)
Directions
Preheat the oven to 250°F. Season the short ribs with salt and pepper on all sides. Heat a large Dutch oven over medium-high heat and add the avocado oil. Add the short ribs and sear for 3 minutes on each side so a crust forms.
Add the vegetable broth until the short ribs are mostly covered. Bring the broth to a boil.
Stir in the French onion dip mix, then lower the heat to a simmer. Cover the pot and lower the heat.
Bake for 3-4 hours, until the meat is tender and falls apart easily with a fork. Serve with potatoes, a salad, or with pita.
