A sweet salad that tastes like sunshine and summertime in every bite.

Watermelon & Corn Salad Recipe

This salad tastes like your mouth is on vacation. It's like summer in a salad! If you know me, you know I am not a fruit salad person—I like my salads green, crunchy, and garlicky. But friends, this salad just might be the exception, especially in summer. I cut the watermelons to be about the same size as the corn kernels so each and every bite has all of the flavors mixed in. Now this is a sweet, juicy salad I can get behind.

Ingredients for Watermelon & Corn Salad

  • 1/2 ripe watermelon
  • 2 ears sweet corn, shucked
  • 3 Persian cucumbers
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 cup crumbled feta

How to Make the Watermelon & Corn Salad

  1. Cut the watermelon into small, 1/2" cubes and add to a large bowl.
  2. Carefully cut the corn off the cob and transfer to the bowl. Cut the cucumber into 1/4"-1/2" cubes and add to the bowl.
  3. Squeeze the lemon over the salad and drizzle with olive oil. Add the salt and toss to combine. Top with crumbled Feta and gently mix.Serve as a summer side anytime you want to go on vacation.
