Watermelon & Corn Salad Recipe
This salad tastes like your mouth is on vacation. It's like summer in a salad! If you know me, you know I am not a fruit salad person—I like my salads green, crunchy, and garlicky. But friends, this salad just might be the exception, especially in summer. I cut the watermelons to be about the same size as the corn kernels so each and every bite has all of the flavors mixed in. Now this is a sweet, juicy salad I can get behind.
Ingredients for Watermelon & Corn Salad
- 1/2 ripe watermelon
- 2 ears sweet corn, shucked
- 3 Persian cucumbers
- Juice of 1 lemon
- 3 tablespoons olive oil
- 1/2 teaspoon salt
- 1/2 cup crumbled feta
How to Make the Watermelon & Corn Salad
- Cut the watermelon into small, 1/2" cubes and add to a large bowl.
- Carefully cut the corn off the cob and transfer to the bowl. Cut the cucumber into 1/4"-1/2" cubes and add to the bowl.
- Squeeze the lemon over the salad and drizzle with olive oil. Add the salt and toss to combine. Top with crumbled Feta and gently mix.Serve as a summer side anytime you want to go on vacation.
