It's Taco Night
Posted: | Categories: Substack Archives | Tags:substackTaco night is the easiest way to make everyone around our table happy. Our kids fill tortillas with veggies and protein they like, Adi covers his with hot sauce, and I load my tortilla up with the perfect combination of all my favorite flavors.
Our taco nights aren’t traditional. They typically consist of tortillas, a slaw, and a protein, and I’ll throw veggies on the table for my kids to snack on before dinner. If those end up in a tortilla, great. The slaw and proteins are great to save for a quick lunch the next day. Just toss them in a bowl.
Obviously, the whole point of giving you these recipes is allowing you to customize them to your taste. With these, you have 16 different taco possibilities, each one uniquely delicious. And make it authentic to YOUR family’s taco night—add your favorite hot sauce, top them with cheese, or serve with sour cream on the side. Do what makes you happy.

Choose Your Protein
Easy Ribeye
We make steak for dinner at least once a week and always use this method. It’s perfect every time.
Airfryer Fish
This breaded fish is SO easy. Use your favorite white fish—I use cod, but you can make it with halibut, sea bass, or whatever looks best at the store. It’s also great on top of a salad.
Taco Tofu
This is one of my favorite ways to make crispy tofu that’s packed with flavor. Freezing the tofu in advance gives it a chewier texture and lets it soak up all the delicious taco seasoning.
Shredded Chicken
Once you make shredded chicken like this, you’ll never make it another way. It’s easy, juicy, and you don’t have to get your hands dirty. Swap out the spices and use your faves, or try it with taco seasoning!
Choose Your Veggies
Summer Corn Salad
I love that this salad uses all the best-looking produce at the market and adds a little extra flavor. It’s also great stuffed in a pita with your favorite spread or avocado slices.
Easy Slaw
If you’re only feeding a few people, this is an easy slaw to make in smaller portions. Even if you don’t, it’s hardy enough to hold up in the fridge for a few days, even if you dress all of it at once.
Taco Slaw
My favorite way to add color and flavor to the table. Toss in some carrots if you want, use pre-shredded cabbage if that’s easier. The herbs add a pop of color AND fresh flavor.
Supermarket Slaw
If you’re hosting a group taco night, this is what to serve. It’s packed with a ton of veggies (that could easily be a meal by itself for vegans or vegetarians) and it comes together fast, so you can get back to the party.
