Meal Prep Salads

The heartier the salad, the better it saves. We’re not talking mixed greens or arugula salads—these are salads that can be dressed one day to enjoy in the days to come. You ask for easy, packable lunches all the time, and these are the ones that deliver. Pack them for the office, beach, or picnic, or keep them in your fridge for quick lunches. It’s the easiest, most delicious way to keep veggies on hand for a full meal or to serve with a pita and your favorite protein.

Three Goddess Salads

Make a big batch of Green Goddess and mix and match the fillings based on what you have. You can make one with veggies only and one with beans. You could also toss the dressing with leftover shredded chicken for a delicious green goddess chicken salad. Stuff the salads in a tortilla or pita for a great meal.

Two Slaws, for Parties, Packing, & Throwing in a Wrap

We always keep slaws on hand to add as condiments to meals. They add a pop of flavor and crunch, and save for a few days in the fridge. If you don’t want to get the ingredients for these, just get a green cabbage, shred it, and toss it in miso vinaigrette. Yum.
