I get it—eggs are expensive. But for what they add to meals, they’re worth it. (Can you tell I went to L’Oréal this week?) An egg can turn a bowl of veggies into a satisfying meal that keeps you full all afternoon. Poach or cook it over easy so the yolk adds a creamy, delicious sauce to take it to the next level. When you think of all you’re saving by eating leftovers from the night before, those eggs don’t seem as expensive after all.

Veggies & Eggs


This is the salad for anyone who prefers cooked veggies to raw. It’s packed with sautéed veg and served over arugula that softens from the heat. Put an egg on it for lunch or dinner, or serve without the egg for a side everyone will love. And a tip: It would pack well for lunch, too, just keep the arugula separate until you’re ready to eat.

Easy Dinner + Leftover Grain Bowl

The best way to eat leftovers is to transform them into something new the next day. It’s fresh, exciting, and will make your co-workers wish they thought of it. Here, you get the best of both worlds—an easy dinner for everyone and an incredible bowl for you the next day. I served the dinner with salmon, but you could easily swap for chicken. Throw those in the bowl the next day, too. (Or, you know, put an egg on it.)

Lentil Salad with Eggs

This salad is as good for lunch as it is a side at dinner. Let it double for both—or let it help you with meal prepping. All the veggies in this get better over a day or two, making it a great lunch option to take to the office. If you’re packing it, add a 7-minute egg to serve with it or make a fried egg if you’re working from home. You can’t go wrong.
