The Best Grill-Side Salads

We didn’t. 😅 We went away to the Poconos, where other people cooked for us and I didn’t have to wash any dishes. It was incredible. We made the reservation so long ago we forgot about it until a few weeks ago—that’s how much we needed the break.
The next few weeks are jam-packed with end-of-school events, camp prep, and getting ready for summer. I’ll be eating bowls on repeat; steamed broccoli makes them so much easier. (And it makes making a quinoa bowl like this one so much more filling.)
With summer so close, today’s recipes are all about enjoying time outside with your family and eating delicious meals that don’t take forever. You don’t need a grill to make these—but eating them next to a grill definitely sets the mood.
I’ll share more dishes with warm-weather produce when it’s their time to shine. For now, here’s what’s on the menu:

We always have steak in our house for an easy weeknight meal everyone will love. Our favorite is from Cotton Cattle Co. at the farmer’s market. We usually cook it the same way, but serving it on top of a veggie-packed salad turns it into the most incredible meal. The grilled onions make it even better!
Three-Ingredient Potato Salad
It’s creamy like classic potato salad, but I made this one in minutes. Potatoes are the perfect blank canvas; I like to pair creamy potato salad with protein (like the steak above), veggies, or slaws. It’s the perfect addition to a bowl. If you’re at the grill, throw the potatoes on until tender for a potato salad with even more flavor.
Veggie Pasta Salad
This is the recipe that will convince you to move pasta salads to the main course. Like potato salad, I grew up eating deli containers full of macaroni salad. (Though honestly, I prefer potato.) This pasta salad breaks the rules and is filled with lots of veggies for extra flavor. It’s the perfect summer side, and also packs well for a picnic, road trip, or office lunch.
