This is it. We’re back to the grind and back to reality.

I’ve been getting a lot more requests recently for dairy-free, gluten-free, and veggie-forward meals. For today’s recipes that aren’t naturally DF or GF, I’m giving swaps to make it easy for you. All of them are vegetarian! And we’re all looking for easy meals to pack for lunch right now (myself included)—these hit every note.

Here’s what’s on the menu this week:

Pizza Salad, Three Ways

Pizza salad makes everyone happy. This is an easy way to add extra veggies to your Friday pizza night while keeping the meal easy. Plus it’s so refreshing! Use pizza from your favorite local spot for the first option, the leftovers as croutons, and whip up a quick tortilla pizza for the taco. We normally go with plain cheese. You can add your favorite toppings for extra veg and/or protein, too.

Vegan Caesar Wrap

Swapping chicken for crispy tofu makes this a delicious vegan meal for even the most stubborn carnivores. Hummus is my secret for a creamy vegan Caesar dressing, and I swap anchovies for pickles, which gives it the same salty bite. You can use capers, too, if that’s what you have in your fridge.
