Purple Potato Chips Recipe

Whether you’re craving salty, crunchy potato chips or just have a lot of potatoes you don’t know what to do with, these homemade purple potato chips take only about 30 minutes from start to crunch. Most of the time with my recipes a mandoline is a “nice to have,” not necessarily a MUST, but to get your potato slices extra thin without driving yourself crazy I would definitely recommend investing in one. Trust me, you’ll get a lot of use out of it!

Ingredients for Purple Potato Chips

  • 4 purple potatoes

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon garlic powder

How to Make Purple Potato Chips

  1. Slice the potatoes thinly with a mandoline and add the slices to a large bowl and fill with cold water. Drain and repeat until the water runs clear.

  2. Lay the potato slices on a tea towel to dry them.

  3. Return the dry potato slices to the (now dry) bowl and drizzle with olive oil.

  4. Season salt, pepper, and garlic powder and mix well to combine.

  5. Place the potatoes in a single layer on a baking sheet or air fryer basket. Preheat the air fryer to 400F and cook the potatoes for 10-15 minutes, until crispy.
