Good Stuff Granola Recipe

My favorite part of any granola isn’t the oats, it’s the inclusions. A handful of sweet and salty seeds, nuts, and/or chocolate chips is so much better than getting just a bunch of oats, don’t you think? This recipe is just a blueprint—use it as a guide to create a granola you’ll love. The coconut oil can be swapped for olive oil, honey for maple syrup, tahina for your favorite nut butter. The sky’s the limit!

Ingredients for Good Stuff Granola

  • 3 cups rolled oats

  • 2 cups of your favorite inclusions - I used a combination of walnuts, sliced almonds, pumpkin seeds, desiccated coconut, and sesame seeds

  • 1/3 cup melted coconut oil

  • 1/3 cup tahina

  • 1/2 cup honey

  • 1 teaspoon vanilla

  • 1/2 teaspoon cinnamon

  • 1 teaspoon salt

How to Make Good Stuff Granola

  1. Line a baking sheet with parchment paper and preheat the oven to 350F.

  2. Toss together the oats and inclusions in a large bowl.

  3. Add the coconut oil, tahina, honey, and vanilla to the dry ingredients and stir to combine.

  4. Stir in the cinnamon and salt, making sure all of the dry ingredients are evenly coated in the wet.

  5. Spread the granola on the parchment paper. If you prefer a chunkier granola, pat it down into one layer.

  6. Bake for 22-25 minutes, until the edges are golden brown. It will still be soft at this point! Let the granola cool and break it up as desired into smaller pieces.
