Granola Cookies Recipe

I made these a few weeks ago with my kids and they couldn’t be easier—all you have to do is mix all the ingredients together with a fork, spoon them onto a baking sheet, and bake. No stand mixer required! 

My kids made simpler cookies, with oats, egg, baking powder, 3 tablespoons peanut butter, flour, and chocolate chips. They would never eat these as is—but they weren’t home when I made these, so I added what I wanted.

No matter what you put in them, these cookies are a great way to get kids involved in the kitchen with easy cleanup and a delicious reward. When it comes to the inclusions, use what you have!

Ingredients for Granola Cookies

  • 1 ripe banana
  • 1 egg
  • 2 tablespoons olive oil (you can use whatever oil you have)
  • Pinch of salt
  • 2 tablespoons maple syrup
  • 2 tablespoons tahina
  • 1 teaspoon honey
  • ⅓ cup oats
  • ¼ cup pumpkin seeds
  • ¼ cup sliced almonds
  • ½ teaspoon cinnamon
  • 2 tablespoons coconut flakes
  • 2 teaspoons sesame seeds, plus more for topping
  • ½ teaspoon baking powder
  • ⅓ cup almond flour
  • ¼ cup all-purpose flour
  • ¼ cup chocolate chips, plus more for topping

How to Make Granola Cookies

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper. 
  2. Place the banana on a large plate (ideally one with high edges). Mash it with a fork. 
  3. Add all the remaining ingredients, in the order listed, mixing as you go. When you add the flours, mix only until no streaks remain. 
  4. Use a cookie scoop to portion the batter on the prepared baking sheet.
  5. Top each cookie with chocolate chips and sesame seeds. 
  6. Bake for 20 minutes, until the cookies golden brown.
