Healthy Cookie Dough Bars Recipe

I always have a batch of these in my freezer to snack on after dinner. They have the perfect amount of sweetness in every bite from the maple syrup and date caramel, plus studs of chocolate chips. You can roll them into balls if you’d like, or cut them into whatever size bar you love. The secret ingredient is tahini—it adds the perfect amount of creaminess without an overpowering flavor. 

Ingredients for Healthy Cookie Dough Bars

  • 1 cup almond flour

  • 1/4 cup date caramel

  • 3 tablespoons maple syrup

  • 1/4 teaspoon salt

  • 1 teaspoon vanilla

  • 1/4 cup tahini

  • 3/4 cup oat flour

  • 1/4 cup dark chocolate chips
  • 1/2 cup desiccated coconut, divided

How to Make Healthy Cookie Dough Bars

  1. Add the almond flour, date caramel, maple syrup, salt, vanilla, and tahini and mix to combine.
  2. Stir in the oat flour until a Play-doh-like consistency is reached. 
  3. Fold in the chocolate chips.
  4. Sprinkle half the coconut over the parchment paper. Turn the dough out over the coconut and press down to be about 1" high. Press the sides to form a rectangle.
  5. Add the remaining coconut over the dough and fold the parchment paper around the rectangle to fully cover it. Freeze for 30 minutes.
  6. Remove from freezer and cut into 1" x 2" rectangles. Coat the rectangles fully in the coconut and store in a large freezer-safe plastic bag in the freezer for up to 2 weeks.
