Chicken Meatballs

Directions

1. Mix the chicken, oregano, salt, garlic powder, egg, breadcrumbs, nutritional yeast, black pepper, and olive oil together in a large bowl.
2. Use a scoop to portion out 2 tablespoon scoops of the chicken mixture. Roll into a ball.
3. Place 1 cup of breadcrumbs on a plate and roll each meatball in the breadcrumbs to fully coat.
4. Heat avocado oil in a large skillet (enough to cover the bottom of the pan by ¼”).*
5. Once the oil shimmers, add the meatballs to the oil. Cook for 3-5 minutes on each side until browned.
6. Heat your favorite sauce in a saucepan over medium heat. Add the meatballs to the sauce and keep over heat until ready to serve.

7. *As an alternative, you can place the meatballs on a baking sheet and spray with oil, then bake at 400°F for 18-20 minutes, flipping halfway through, until fully cooked.
