1 1/2 cups pumpkin puree

1/2 cup maple syrup

2 cups all-purpose flour

1 cup chocolate chips, divided
Directions
- Preheat oven to 350°F and line or grease a muffin pan. Add the pumpkin, eggs, sugar, olive oil, vanilla, and maple syrup to a blender. Pulse until smooth.
- In a large bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- Pour the batter from the blender into the bowl with the dry ingredients while whisking. Whisk them together until smooth and no streaks remain.
- Fold in ½ cup chocolate chips.
- Divide the batter evenly among the prepared muffin pan and top with the remaining chocolate chips.
- Bake for 30 minutes until a toothpick inserted into the muffins comes out clean. Enjoy for breakfast or dessert!
